Vegan Matcha Brownie Sundae

For those of you who took a peek at Sammy’s article earlier this week (if you haven’t you should check it out!) you’ll recognize this brand of non-dairy ice cream I used to create this dessert. After reading Sammy’s article, I was inspired by Snow Monkey, and loved the idea of a healthy indulgence. The second I opened the top, I noticed that they feature a female athlete eating the ice cream-- Love that! It's like "hey, you're about to eat an ice cream, so instead of feeling guilty about it, look as this amazing and incredible woman ALSO enjoying this ice cream." Honestly, we as women are CONSTANTLY comparing ourselves to others. This is a women owned brand, they get it. They know that we can feel better about enjoying this because she's enjoying it too.

Now, I know what you’re thinking, this sundae is probably not the HEALTHIEST indulgence, but it’s Women’s History Month and we, as women, f*cking deserve it. I will say that when I came up with the idea to work with Snow Monkey, I did not set out to do a matcha sundae. I was fully intending on something a little more basic like mint chocolate chip or salted caramel, but fortunately for me the Sprouts by my house (if you’re a west coaster and are looking for this brand, pretty much every Sprouts carries it) only had the matcha green tea. I thought– let’s give it a try and see how it goes.

Wow, am I glad I did… If you’re like me and love matcha, but also love when they dump sugar syrup into it (I’m sure true matcha drinkers are shaking their heads at me right now) then this is the dream scenario. You get the fruity, bitterness from the matcha, mixed with the sweet yet acidic flavor of the rich chocolate brownies; a truly perfect pair. If you don’t believe me, try it for yourself. I promise you, it doesn’t just look good.



Ingredients:

1 12 oz. Bag of CBDough’s The Brownie mix, prepared according to vegan package directions

1 Pint of Matcha Green Tea Dairy-Free Snow Monkey Ice Cream

Chocolate Syrup, optional


Directions:

  1. Take a cooled CBDough brownie and heat it up in the microwave for 30 seconds (this isn’t totally necessary, but who doesn’t like a warm brownie sundae?)

  2. Scoop Snow Monkey Dairy-Free ice cream onto warm brownie.

  3. Drizzle with chocolate syrup and enjoy!


So easy. So Delicious. The treat you have needed and truly deserve.
